  • He received degrees in hospitality and culinary arts from French Hospitality Schools and French Hospitality & Tourism Higher Education Center.
  • He received a PhD in Sociology at the Ecole des Hautes Etudes en Sciences Sociales (EHESS Paris), France.
    After a career in the hospitality industry, he taught French cuisine at hospitality schools (Paris & Toulouse), and he is currently Deputy Dean of ISTHIA, the Scholl of Tourism, Hospitality Management and Food Studies at the University Toulouse – Jean-Jaurès, France.
  • He is member of CERTOP (Research Center on Work, Organization and Policies. UMR CNRS 5044), the Chair of Food Studies: Food, Culture and Health at the Taylor’s University. And of the International Association of French – Speaking Sociologists (AISLF).
  • His research interests focus on studying food social space, specially the food system and the “culinary space”.

DR. TRISTAN FOURNIER

Member of the Chair of Food Studies: Food, Cultures and Health.

  • Tristan Fournier is a research fellow in sociology at the Interdisciplinary Research Institute on Social Issues - Social Sciences, Politics, Health (IRIS) within the French National Center for Scientific Research (CNRS) in Paris (France).
 
  • His work focuses mainly on the social, scientific, and political issues of food changes. He currently leads three research programs: the first one on the socio-ethical issues of nutritional epigenomics, the second one on the obstacles to food heritagization in the Pyrénées mountains (France), and the third one on fasting as a re-emerging promise in Western societies.
 
  • He holds a PhD in sociology (2011) from the University of Toulouse (France). His thesis was entitled “A sociology of eating choices. The dietary compliance for hypercholesterolemic eaters” and advocated an interactionist approach of food and health practices. After two post-doc positions, he joined the CNRS in 2015 as a permanent researcher.

Associate Professor (Lecturer) of sociology at the university Toulouse – Jean-Jaurès, France. 

  •  She has a Sociology PhD from the University of Toulouse 2, France.
  • She is co-supervisor of research committee 17 in Sociology of Food of the AISLF and member of the BECO platform (Baby, early childhood in Contexts)
  • She is mainly studying Food Sociology in regards to emotions, pleasure and well-being compared to sociology of health, of family and of children.
  • She received the Social Science Foundation Prize’s for her works in 2016.

Member of the Chair Food Studies: Food, cultures and Health 
 

  • He is a Directeur de Recherche (Senior Scientists) Emeritus at CNRS, the national research agency of France, and teaches at the school of Advanced Studies in the Social Sciences (EHESS) in Paris.
  • His main area of research is an interdisciplinary perspective on food and nutrition with a particular emphasis om meals and the role of social interactions in human eating behavior.
  • He chairs the scientific and ethic committee of the French Fund for food and Health (FFAS).
  • He recently edited and published Selective Eating: The Rise, Meeting and Sense of “Personal Dietary Requirements” (Odile Jacob, 2015).

PROFESSOR DR. GILLES BOËTSCH

Senior Director of Research at the CNRS (the French national centre for scientific research).

 

  • From 1995 to 2009, he was director of the Bio-cultural Anthropology UMR (mixed research unit), and since 2009 he has been Director of the Environment-Health-Societies UMI (international mixed unit). 
  • He was President of the Scientific Council of the CNRS from 2006 to 2010. 
  • An anthropobiologist, his researches bear on the adaptation processes between human populations and their environments. 
  • He is currently working in Dakar on the relations between city and health as well as on the socio-environmental impact of the deployment of the Great Green Wall.
  • He published over 100 articles in international scientific journals and directed or co-directed some forty scientific publications including "Santé et société en Afrique de l'Ouest" (Health and Society in West Africa), CNRS Edition, 2015.
